- 2 Cucumbers, diced
- 2 Large Fennel Bulbs, Diced
- 2 Medium Hass Avocados, Peeled, pitted, diced
- 1 whole red union, diced
- 1 cup pickled banana peppers, diced
- 2 bunches of cilantro chopped up
- 4 tablespoons honey
- 6 tablespoons fresh squeezed lemon juice
- Add salt, pepper and any other spices to taste.
Mixin It Up
Combine all ingredients in a bowl and mix thoroughly. Let mixture sit at least twenty minutes before serving. Serve chilled. This salsa can be served not only with chips but as a topping to any number of complimentary dishes.
